Order of Work
Day Before
  • Bake the biscuits and keep in an airtight container. Decorate on the day.
  • Season and oil the meat, wrap tightly in cling film and refrigerate.
  • Stew the peaches, cover and refrigerate.
On the day
  • Chill the drinks
  • Prepare green bean and apple salads.
  • Micro-steam the butternut.
  • Light the fire.
  • Prepare the sandwiches.
  • Pipe the cookies with chocolate and prepare the fruit platter.
  • Place the butternut and meat on the braai, cover with lid and cook for 30 minutes.
  • Remove butternut and start basting the meat, cook until done.
  • Toast the sandwiches on the braai.
  • Rest the meat, carve and serve with room temperature butternut, sandwiches and salads.
  • Dust cookies with icing sugar and serve with fruit platter.
