Processco on the Patio

Who can resist feeling uplifted by October? She takes away the winter blues with her happy, sunny skies, beautiful roses and a promise of good times to come!

We start the summer season with a lunch in the garden or on the stoep with a few special girlfriends.

First mellow them with a Prosecco Punch, treat them to a beautiful Poached Salmon and/or Mushroom and Onion Tart. Keep them healthy with two divine salads and end the meal with a tiny serving of featherlight Cheesecake served in individual shot glasses, topped with strawberry jelly and whole strawberries.

Order of Work
Day Before
  • Make sour cream pastry and refrigerate.
  • Prepare individual Strawberry Cheesecake Desserts.
  • Roast peppers for the salad.
  • Make up sugar syrup for Prosecco Punch.
  • Caramelise the onions for the Mushroom and Onion Tart.
  • Set the table and chill the wine.
On the Day
  • Poach the salmon and boil the quails eggs.
  • Roll out pastry and make Mushroom and Onion Tart.
  • Assemble the Roasted Peppers and White Bean Salad.
  • Steam asparagus and finish off the Poached Salmon.
  • Prepare Green Salad with Figs, dress only before serving.
  • Prepare Prosecco Punch, dress Green Salad with Figs.
