Black Mushrooms with Basil Pesto

This is a really nice vegetarian option.


  • 6 large black mushrooms
  • olive oil
  • ± 4 T (60 ml) Ina Paarman's Basil Pesto
  • Ina Paarman's Garlic Pepper Seasoning
  • microgreens

Adjust the oven rack to the middle position and preheat to 200°C.

Wipe the smooth tops of the mushrooms with a damp cloth.

Don’t cut away the stems, they have a lot of flavour!

Drizzle a little olive oil over the gills. Squeeze Basil Pesto over the gills. Season with Garlic Pepper Seasoning.
Place the mushrooms, stem side up, in an oiled ovenproof serving dish.

Bake for 15 – 20 minutes.

Garnish with a generous spreading of microgreens.
