You will need
1 large onion, thinly sliced in half moon slices
Ina Paarman’s Green Onion Seasoning
3 T (45 ml) butter
1 T (15 ml) olive oil
700 g butternut, cubed
1 t (5 ml) Ina Paarman’s Seasoned Sea Salt
1 cup (250 ml) fresh cream
¾ cup (180 ml) fresh breadcrumbs
¾ cup (180 ml) grated gouda cheese
chives snipped (optional)
Method
Adjust the oven rack to the middle position and preheat the oven to 180°C.
Butter 5 ovenproof dishes.
Pre-season the onion with Green Onion Seasoning. Sauté onion until soft in the butter and oil. Add cubed butternut seasoned with Seasoned Sea Salt.
Stir-fry butternut until almost cooked.
Divide butternut between individual ovenproof dishes or use one medium/large ovenproof dish.
Add cream and sprinkle a mixture of breadcrumbs and cheese over.
Bake for 30 minutes until golden and bubbly.
Serve, sprinkled with chives if using.
