You will need
3 cups (750 ml) cake off cuts
¼ cup (60 ml) Amarula
¼ cup (60 ml) brandy
± 50 g melted chocolate, dark or white
desiccated coconut or chocolate vermicelli
Method
Amarula and Brandy Truffles
Break the cake offcuts into small pieces.
Pour over the brandy and Amarula, and soak for 15 minutes.
Mix until the cake comes together and becomes pasty.
Roll in balls ± the size of ping pong balls, make some smaller.
Spoon 1 teaspoon of melted chocolate over and roll in your hands to coat the ball.
Immediately re-roll in coconut or chocolate vermicelli.
Variation
Rum truffles: Replace the alcohol with ½ cup (125 ml) dark rum.
Alcohol free truffles: Replace the alcohol with ½ cup (125 ml) strong coffee or milo.
