You will need

1 t (5 ml) baking powder
2 T (30 ml) flour
3 T (45 ml) Ina Paarman’s Chicken Spice
20 chicken wings

1 cup (250 ml) Ina Paarman Chipotle Sauce

1 T (15 ml) poppy seeds (toasted in a dry pan)


Measure the baking powder, flour and Chicken Spice in a plastic bag.

Add chicken wings.

Toss to coat evenly. Place a wire rack on a baking sheet, Arrange the wings on the rack and leave them in the refrigerator to dry overnight.

Prepare medium hot coals.

Braai wings, turning regularly until golden brown and crisp.

Decant wings into a large bowl, toss with Chipotle Sauce.

Sprinkle with poppy seeds.

Serve soon.
