Cranberry and Apple Salad

This salad ticks all the boxes: sweet and sour, crisp and crunchy, finished with a lovely well balanced Vinaigrette.


  • ¼ cup (25 g) dried cranberries
  • ¼ cup (60 ml) Ina Paarman’s Red Wine Vinaigrette
  • 1 large Golden Delicious apple, finely sliced on a mandolin
  • 1 T (15 ml) lemon juice
  • 2 stalks of celery with leaves, sliced
  • 4 spring onions with green stems, sliced on the diagonal

Soak the cranberries in the Red Wine Vinaigrette for at least 20 minutes. Toss the sliced apple with lemon juice.
Toss cranberry mixture with the apple, sliced celery and spring onion. Pour a little more Vinaigrette over the salad just before serving.
