Classic Balsamic Vinaigrette

You will need

¼ cup (25 g) dried cranberries
¼ cup (60 ml) Ina Paarman’s Classic Balsamic Vinaigrette
1 large Golden Delicious apple, finely sliced on a mandolin
1 T (15 ml) lemon juice
2 stalks of celery with leaves, sliced
4 spring onions with green stems, sliced on the diagonal

Method

Soak the cranberries in the Balsamic Vinaigrette for at least 20 minutes. Toss the sliced apple with lemon juice.
Toss cranberry mixture with the apple, sliced celery and spring onion. Pour a little more Vinaigrette over the salad just before serving.
