Vegetable Spice

You will need

2 punnets baby marrows, cut into flat ribbons
2 punnets mange tout, cut lengthways
2 punnets green asparagus, snap off hard ends
500 g frozen baby peas (petit pois)
olive oil
Ina Paarman’s Vegetable Spice
finely chopped parsley


Steam all the vegetables separately (except baby peas), until just done. Mix cooked vegetables with frozen peas. Toss with olive oil and Vegetable Spice and keep on one side.

Just before serving reheat vegetables in the microwave.
