Mangoes are one of South Africa’s most outstanding and popular fruits. From February to March we often eat them twice a day, for breakfast and as a salad with lunch or supper.

You will need

3 large ripe mangoes
2 chillies, remove seeds and membranes
1 t (5 ml) Ina Paarman’s Vegetable Spice
¼ cup (60 ml) Ina Paarman’s Lime & Coriander Dressing
fresh coriander (optional)

Method

Peel and cube the mangoes. Slice the seeded chillies very finely. Season mangoes lightly with Vegetable Spice. Toss everything together, with Dressing. Garnish with fresh coriander if available.
