Minty Summer Salad

Serves 5-6
A delicious fresh salad. The two most important tips I can give you is not to leave out the mint, it gives a refreshing clean flavour, and most importantly, dress the salad just before serving to prevent it from drawing water.

You will need

2 cloves of garlic, crushed
¼ cup (60 ml) Ina Paarman’s Reduced Oil Greek Dressing
¼ cup (60 ml) plain yoghurt
1 t (5 ml) Ina Paarman’s Lemon & Black Pepper Seasoning or to taste

3 large very ripe tomatoes, sliced into small wedges
1 bunch small radishes, washed and sliced
½ English cucumber unpeeled, halved lengthways and then finely sliced
3 spring onions with green tops, sliced on the diagonal
a handful of fresh mint leaves, roughly chopped
a handful of fresh basil or parsley leaves, roughly chopped

Method

Make the dressing in advance and keep it in the fridge.

Toss the vegetables, mint and basil together. Pour Dressing over just before serving.
