This is the very best way to prepare bacon. The pre-preparation can be done the night before. It also allows the bacon to dry out as most of our commercial bacon is pumped with water to increase the mass. Stretching the bacon with the rolling pin keeps it nice and flat. Cooking bacon between sheets of baking paper avoids mess in the oven.

You will need

250 g rindless streaky bacon
baking paper

Ina’s Tip

Baking paper is essential here because the bacon will stick to greaseproof or wax paper.


Adjust the oven rack to the middle position. Preheat oven to 200°C. Line a large oven tray with baking paper. Lay the bacon strips on the paper, don’t overlap them.

Lay a second sheet of baking paper (cut to size) over the bacon and roll with a rolling pin over the top sheet to stretch the bacon lengthways. Leave to stand with the paper on. Can be left overnight in the fridge. Bake between sheets of paper for 10 – 12 minutes until bacon is crispy.
