Oven Roast Cherry Tomatoes
Tomatoes always bring a happy colourful note to any presentation. Do prick them before roasting or frying to prevent unwanted explosions.
YOU WILL NEED
- 200 g punnet cherry or baby rosa tomatoes
- 350 g punnet red and yellow vine tomatoes
- olive oil
- Ina Paarman’s Vegetable Spice
Adjust the oven rack to the middle position and preheat oven to 200°C.
Prick each tomato with a toothpick to prevent bursting.
Place tomatoes on a well oiled baking tray.
Drizzle with a little olive oil and season with Vegetable Spice.
Roast for ± 10 minutes.
