Lime & Coriander Reduced Oil Dressing, Lemon & Black Pepper Seasoning
You will need
1 small ripe papino, peeled and pipped, reserve a few pips for garnish
1 red chilli, finely sliced
¼ cup (60 ml) Ina Paarman’s Lime & Coriander Reduced Oil Dressing
Ina Paarman’s Lemon & Black Pepper Seasoning
butter lettuce
papino pips
fresh coriander leaves
lime slices
Method
Dice or slice the papino. Add the chilli and Dressing. Toss and taste for seasoning.
Serve on lettuce leaves.
Garnish with a few of the reserved papino pips, fresh coriander and lime slices.
