Sparkling Watermelon Cocktail

A sparkling cooler made with watermelon, which is abundant in February.


  • ± 250 g watermelon flesh, pipped
  • 500 ml semi-sweet sparkling wine or prosecco
  • ice cubes
  • fresh mint leaves
  • cubes of watermelon for garnish

Blend the watermelon until smooth and pour into a jug. Refrigerate.

To serve

Half fill cocktail glasses with watermelon juice, add ice and top up with sparkling wine. Add mint and watermelon cubes speared with a fancy cocktail stick to garnish.

Ina's Tip

Prepare the watermelon juice and garnish in the morning and refrigerate. Assemble cocktail just before serving.
