You will need
± 250 g watermelon flesh, pipped
500 ml semi-sweet sparkling wine or prosecco
fresh mint leaves
cubes of watermelon for garnish
Prepare the watermelon juice and garnish in the morning and refrigerate. Add sparkling wine or prosecco and ice cubes to watermelon pulp just before serving.
Blend the watermelon until smooth and pour into a jug. Refrigerate.
Half fill cocktail glasses with watermelon juice, add ice and top up with sparkling wine. Add mint and watermelon cubes speared with a fancy cocktail stick to garnish.
