Sparkling Watermelon Cocktail
A sparkling cooler made with watermelon, which is abundant in February.
YOU WILL NEED
- ± 250 g watermelon flesh, pipped
- 500 ml semi-sweet sparkling wine or prosecco
- ice cubes
- fresh mint leaves
- cubes of watermelon for garnish
Blend the watermelon until smooth and pour into a jug. Refrigerate.
Half fill cocktail glasses with watermelon juice, add ice and top up with sparkling wine. Add mint and watermelon cubes speared with a fancy cocktail stick to garnish.
