You will need
4-5 large sweet potatoes, peeled and cut into blocks
Ina Paarman’s Potato Spice
2 T (30ml) butter
2 – 3T (30ml – 45ml) honey
1 T (15ml) orange rind
Boil in about 1 cup (250ml) of water or steam sweet potatoes, until soft.
Season with Potato Spice and add butter, honey and orange rind.
Mash lightly to make a chunky mash.
Garnish with extra orange rind and serve.
