Sweet Potato Wedges

Microwaving sweet potatoes is the easiest and most nutrient wise way to cook them. No need to peel.


  • 5 medium sweet potatoes
  • ¼ cup (60 ml) water
  • Ina Paarman's Vegetable or Potato Spice
  • 3 T (45 ml) butter, melted

Place the sweet potatoes in a microwave proof dish, add the water and cover with the lid. Microwave for ±10-15 minutes on high until potatoes are fork tender. Cut lengthways into halves or quarters, season with Vegetable Spice. Arrange potato wedges into a serving dish. Drizzle with melted butter.

Ina's Tip

Scoop sweet potato out of the skins, season, and mash with butter. Reheat in microwave before serving.
