An all-time S.A favourite. We normally buy one thick T-bone steak and slice it off the bone for serving. Delicious served with bone marrow and shallot rings.

You will need

1 x 2cm thick well-aged T-bone steak (600 g – 1 kg)
Ina Paarman’s Garlic Pepper Seasoning
olive oil
± 8 beef marrow bones
3 shallots, sliced into rings
Ina Paarman’s Green Onion Seasoning


Slice once or twice through the fat of the steak.

Season and oil both sides of the meat with Garlic Pepper Seasoning. Leave to stand for 30 – 45 minutes at room temperature.

Season the marrow bones with Garlic Pepper Seasoning.

Slice the shallots and season them with Green Onion Seasoning.

Prepare a braai fire with medium/hot coals.

Brown the fat and bone sides of the steak, before laying it flat down on the grid. Now add the marrow bones and braai with the steak.

Braai meat and bones turning regularly, until done to your liking.

Transfer steaks and marrow bones to a wooden board.

Tent with foil and leave for 10 minutes to allow the juices to settle.

Serve steak off the bone, sliced into strips for serving, accompanied by marrow and shallots.
