Tomato and Mint Salad

Fresh tasting and colourful. An ideal summer salad.


  • 200 g baby rosa tomatoes
  • Ina Paarman’s Green Onion Seasoning
  • 1 small red onion, sliced into slivers
  • a good handful of fresh mint
  • Ina Paarman’s Reduced Oil Lime & Coriander Dressing

Cut the rosa tomatoes in half and scatter over a serving plate.

Season with Green Onion Seasoning.

Slice the onion and tear up the mint leaves.

Throw the onion and mint over the tomatoes. (The salad will keep, covered, for 3 – 4 hours.)

Just before serving, drizzle with Lime & Coriander Dressing.
