One does not always have the time or inclination to make a pastry topping for a family meal. Try this delicious, quick and easy crouton topping. It is an excellent idea!

You will need

1 x 170 g solid meat tuna in oil
1 onion, finely chopped
½ t (2,5 ml) Ina Paarman’s Green Onion Seasoning
½ cup (125 ml) frozen peas or mixed vegetables
1 x 200 ml Ina Paarman’s Mushroom or Ready to Serve Cheese Sauce

2 cups (500 ml) of cubed ciabatta, French bread or sandwich loaf
2 T (30 ml) butter, melted
2 T ( 30 ml) olive or canola oil
1 t (5 ml) Ina Paarman’s Garlic & Herb Seasoning

Method

Adjust the oven rack to the middle position and preheat the oven to 180°C.

Drain the oil from the tuna into a smallish frying pan. Add the chopped onion, seasoned with Green Onion Seasoning and stir-fry in the tuna oil over medium heat. Use a wooden spoon to stir and cook until soft and golden.

Add peas and stir through. Add Mushroom or Cheese Sauce, stir in. Remove from the heat and gently mix in the tuna.

Dish fish mixture into a small ovenproof dish. In a small mixing bowl toss cubed bread with butter, oil and Garlic & Herb Seasoning and sprinkle over the fish. Bake for 15 – 20 minutes until topping is golden and crispy.
