Mother’s Day Brunch
Go all the way and prepare the whole menu for brunch or select the dishes of your choice to make Mother’s Day special!
Mix the muffins, keep raw dough covered in the fridge.
Cut eighteen, 13 cm x 13 cm baking paper squares for muffins.
Roll bacon in-between baking paper and refrigerate.
Gather everything you need for serving e.g. knives, forks, plates, glasses etc.
Squeeze the juice.
Prepare Aubergine Bake and mix sweetcorn batter.
Bake the muffins.
Bake aubergine and tomato with bacon for the last 10 – 15 minutes.
Pan-fry sweetcorn fritters. Keep warm in the switched off oven.
Make scrambled eggs.
Serve Aubergine Bake with Scrambled Eggs, Bacon and fresh herbs.
