Who can resist feeling uplifted by October? She takes away the winter blues with her happy, sunny skies, beautiful roses and a promise of good times to come!

We start the summer season with a lunch in the garden or on the stoep with a few special girlfriends.

First mellow them with a Prosecco Punch, treat them to a beautiful Poached Salmon and/or Mushroom and Onion Tart. Keep them healthy with two divine salads and end the meal with a tiny serving of featherlight Cheesecake served in individual shot glasses, topped with strawberry jelly and whole strawberries.

Serves 6

Make sour cream pastry and refrigerate.
Prepare individual Strawberry Cheesecake Desserts.
Roast peppers for the salad.
Make up sugar syrup for Prosecco Punch.
Caramelise the onions for the Mushroom and Onion Tart.
Set the table and chill the wine.

Poach the salmon and boil the quails eggs.
Roll out pastry and make Mushroom and Onion Tart.
Assemble the Roasted Peppers and White Bean Salad.
Steam asparagus and finish off the Poached Salmon.
Prepare Green Salad with Figs, dress only before serving.
Prepare Prosecco Punch, dress Green Salad with Figs.
